My version of the house sausage from the Butcher shop I trained at in the Netherlands.
Soft flavors of nutmeg and clove with a with a touch of Dijon.
Applewood smoked and made with Smuttynose Star Island Single.
Sweet maple and chili with a hint of Sour mash. Our Best Seller.
Fennel, chilies, and house made red wine vinegar round these out nicely.
Fennel and tomato create an earthy sweetness.
Sweet soy and floral peppercorns, with a back note of heat.
Cinnamon, Mexican oregano, garlic, dried poblano peppers and and 12 other herbs and spices. Uncased.
Fire roasted poblanos and toasted cumino. Perfect for tacos.
Low-bush blueberries and sweet anise make these a pancake's best friend.
Hand-cracked garlic, provincial herbs and a nice Bordeaux wine.
Nutmeg, mace, clove and a touch of juniper. Great for casseroles or by themselves.
Sage and ginger make this a mild sausage. Eggs and toast happy. Loose not in casings.
Harvest spices and Calvados make these memorable.
Sharp cheddar and bay leaf. Gooey is great.
Fresh Cajun sausage loaded with smoked Tasso ham.
This spicy sausage has nice back notes of oregano and garlic. Great with seafood or cold with cheese.

Spicy lamb sausage in sheep casings, averaging 9 links to a pound - $10 per pound

PSK Dogs:
Garlic and Onion make these not your average dog.
Cayenne, Jalapeno, and Thai Chilies. It puts the HOT in the dog.
Chicken, BACON, cheddar and herbs.
Haddock seasoned with Old Bay and dried celery leaf. White meat without the oink.
Veal and pork. German white sausage with mustard, celery and onion. SOLD OUT
Paté
Wrapped in smoked Ham.
Pork, chicken livers and smoked ham.
Apples bloomed in Flag Hill Wineries Calvados (Apple Brandy) and wrapped in Smoked Tasso Ham.

Our pledge is to purchase from local, natural, free-range, and/or organic sources as much as possible. We trust our family farmers to provide us with the same wholesome quality as they serve on their own table at home.
